Chocolate Cornflakes

So easy... Just the melt chocolate ( I am using dark chocolate) and stir the cornflakes into the chocolate....
Scoop the cornflakse into mini paper cup and freeze ... :D

By the way, i am using cornflakes with honey.... Taste better

Although from the picture, the cake look okay... but aiyah not cook yet ah.....
So hard to predict whether the cake is cook or not.. <_<

I have bought a new oven today. So excited and tak sabar want to trybaking cakes. But when I went home, my MIL is making kuih. A lot of them! I cannot compete with my MIL. Her kuih are very nice and everyone loves them. Somemore since she makes so many kuih, who to eat my cake if I bake them :( Wait till tomorrow see how

Fluene, you can also send your baking to your friends or your mum.. Hahaha.. Or bake in small batches first lol...

your chocolate cornflakes look yummy. I like using honey too, very tasty... but must watch our weight :huh:


I tried Japanese Cheesecake on Sat, will share the outcome with you later. dont have the photos with me now. the cakes is very yummy and soft, no wonder some of them name this as Japanese souffle cheesecake or cotton soft Japanese cheese cake.

Hi Simonne :

I found this recipe from kuali.com .

I can only manage to resize this picture, which show the whole cake before cutting. Will post another one later.


The recipe:
COTTON SOFT JAPANESE CHEESECAKE

140g fine granulatd sugar
6 egg whites
6 egg yolks
1\4 tsp cream of tartar
50g butter
250g Philadelphia cream cheese
100 ml fresh milk (I used UHT whipping cream)
1 tbsp lemon juice
60g superfine flour
20g cornflour
1/4 tsp salt

1.Melt cream cheese, butter and milk in a double boiler. Cool the mixture.Fold in the flours, egg yolks, lemon juice and mix well.

2.Whisk egg whites with cream of tartar until foamy. Add in the sugar and whisk until soft peaks form.

3.Add the cheese mixture to the egg white mixture and mix well. Pour into a 8 inch round cake pan ( Lightly grease and line the bottom and sides of the pan with greaseproof baking paper or parchment paper.)

4. Bake cheesecake in a water bath for 1 hour 10 minutes or until set and golden brown at 160 C (325 F) . (I baked mine for 1 hour and 50min).

I got hold of Alex Goh 's Fantastic Cheesecake. I haven't any of the recipe yet. got a hard time choosing what to bake hahaha...
Will update you girls if i bake any..

I make chinese dessert / tong sui on monday. No photo though

Stew Pear with Almond and Rock Sugar

38g sweet almonds
4g bitter almond ( I dun have this at home, so i use the ground almond)
1 pear
1 piece of rock sugar

1.Soak almonds in hot water for 30 minutes
2.Drain and put into the blender. Blend with 1 cup of water. Strain.
3. REmove cores from pear and cut into pieces
4. Put almond pupl and pears into slow cooker to steam, pour in 3 cups. Add 1 rock sugar
5. Steam for 1 1/2 hour. Serve.

Note :

A very nice home made almond tong sui. And my Mother in law say it is very "Yun" The only problem is, my blender doesn't seem to blend the almond well....seem to have tiny pieces. Maybe i should try blend them dry next time.

can you tell me what is sweet almonds? I like stew pear tong sui, dont know what else I can add, I use rock sugar and pear only all the time. :unsure:

Er if you go to those chinese medical shop you ask for "Pak Hang" (i think) the one they use to boil soup ....
I got it from house fridge... Mother in law bought them from chinese medical shop

Simonne, do you mean 'pak hang' or 'pak hup'? The pak in 'Pak hang' is pronounced as north in cantonese. whereas the pak in 'pak hup' is pronounced as white in cantonese. Both also can be use to make teh stew pear tong sui

I thought "pak hup" are dried lily petals or lily bulbs?

Correcy, pak hup is dried lily something. Not sure whether it is the petals or the bulbs

hi :

as I know there are 2 types of almonds that you can find in chinese medical shop

"Nam hang" = South almond
"pak hang" = North almond

:lol: the above are direct translation and also read in one of the Chinese recipe book. Okay, I will ask for pak hang from the chinese medical shop, me also not sure how is it look like. <_<

Pak hup is dried lily bulbs.

Pak hang is quite small. A little bigger than peanuts. White in color.

I once drank a soup made with nam hang and pak hang in Hong Kong. Really yummy!

Thanks, will remember that. :D I always get confuse, dont know which is which.

Fluene : Nam hang & pak hang + honey dates = yummy too. I had long time ago in HK also.

But hor, i got problem with my blender.. doesn't seem to blen those almond well. I wonder whether i shoud blend it dry or not ?

Anyone making bread ?
I just try baking potato Bread..
The potato instand powder got from bakery supplier. Just addd water and mix = smash potato just like the one in KFC.
I think i didn't read the instruction carefully. I add everything and mix and start kneeding.. Ha.. the dough doesnt seem to rise at all.. and the bread is not soft lol...

Orange CHiffon Cake

I bake orange chiffon cake yesterday.
In fact i bake twice. The first time didn't turn out well. (using Shadow Kwan's recipe )

2nd attempt the one showing here.. ok-lah but the cake didn't rise high like those selling outside. This one the recipe from Alex Goh. I just substitute the milk with orange juice .

Hi cutiepiggie :

I have a recipe for tea punch, perhaps you can try this

Tea punch

¼ Cup castor sugar + ½ Cup hot water ( make into syrup)
½ Cup strong tea ( 2 tsp of tea leaves)
1/8 Cup lemon juice
1/4Cup pineapple juice
½ bottle of Sprite or 7-Up
½ sliced lemon – for deco

Add all ingredients into a punch bow. Chill and add ice cubes.

Hi cutiepiggie :

:rolleyes: I think the correct word should be concentrated instead of strong. You may use 2 teabags to make 1/2 cup of tea.

I bought the canned pineapple juice, not the normal canned size like coke etc... The size is like the canned longan or fruit cocktail. otherwise I think you can use the normal pineapple juice that you can find, e.g. in tetra pack. You may add diced apples too.

This is my recent baking :
Cappuccine Vanilla Oat Cookies

Ingredients :
A
190g plain flour
1/2 tsp bicarbonate soda
1/4 tsp baking powder
1/4 tsp salt

B
115g butter
80g caster sugar
75g light brown sugar

C
1 egg
1/2 tsp vanilla essence

D
150g rolled oats
100g chocolate chips

Method

1. Preheat the oven to 180 C. Grease 3 or 4 baking sheets
2. Sift (A) into a mixing bowl. Set the bowl of sifted ingredients aside.
3. With electric mixer, cream (B) together thoroughly in a bowl
4. Add © and continue to beat until light and fluffy
5. Add(A) and beat on low speed until thoroughly blended. Stir in (D),
mixing well with a low speed.
6. Drop heaped teaspoonfuls onto the prepared baking sheets,
spacing the dough about 1" apart
7. Bake for 15 minutes, until just firm around the edge but still soft in
the centre. Transfer the cookies to a wire rack and leace them to
cool.

Note :

1. Can yields around 36 cookies
2. Keep an eye close during the last few minutes as cookie can easily
turn brown /dark.

i hv tried a simple recipe for fruit punch.

1.5 lt 7up / sprite
1 can of mix fruit
1 can of longan
some fresh fruit like: watermelon cut to small size (the taste will nicer if add fresh fruit)
some XO
