Simonne, you see, I did not notice I was using plain flour all along. So, I did not put any baking powder. I realised my mistake only when I was pouring the flour to make my mocha cake last week. As I did not have any baking powder at hand, I just added in soda bicarbonate. It turned out fine.
If we use paper cups to bake muffins/cupcakes, wouldn't the paper cup sort of expanded due to the weight of the batter?

I bought new papercups last week from my bakery supplier. This papercup are those skinny and tall papercups. Unlike normal papercups they are round and short...I hate those round and short one.. Makes my muffin short and as if my muffin dun rise!

The papercups for muffins in Coffee Bean are really good. They are very firm. I wonder where can we get those paper cups. Any idea?

I bought something similar from bakery supplier shop near my house (cheras area) selling at 20pcs RM1.90.
The good things is , those papercup does not need greasing... just dump the muffin batter into the papercup and bake.. And they really look nice especially if you wanna bake and send out as a gifts to someone.

I bake this yesterday
Walnut and Honey Muffin
Ingredients:
140g self raising flour
1/8 tsp baking soda
salt
140g butter ( i find it a bit oily , will reduce it to 100g next baking)
40g castor sugar
3 tbs honey
3 eggs
1 tsp vanilla essence
40g walnuts
Method :
1.Preheat oven to 180 deg C about 15 minutes. Grease muffin tins
2.Sieve self raising flour with baking soda and salt
3.Beat butter until soft. Mix in sigar and beat until creamy.
Add honey and beaten eggs. Mix well
4. Add vanilla essence and sieved flour (setp 2). Mix in walnuts
5.Pour batter into muffin tins
6.Bake for about 18-20 minutes until golden brown and done.
Set aside on the rack to let cool.Serve
(Reference : "Joy of Making Desserts" by Shadow Kwan
Note
The recipe call for 140g butter which i find a bit oily.
The texture of the muffin is soft and nice

Nowadays pumpkin is getting more and more popular. So i try a pumpkin cake just now.
Here is what i bake
Ingredients

since you're quite expert on baking. can i ask you, whether you hv tried pandan muffin before? i kinda of bored with the usual flavour like chocolate, blueberry. how about pandan and walnut or almond muffin.?

Oh you can try coffee/capucinno or orange/lemon flavored muffin gwa??? During autumn, we make pumpkin muffins here too... Yumm!!!
You can toss fruits like berries and marshmallows in the muffin prior to baking too!

it's hard to get fresh blueberries. sometimes some upscale supermarket sells it once in a bluemoon, the best alternative i can think of it's using blueberry jam to replace but of course the taste is not that good

Apple butter is brown like applesauce and sold in jars, but there's no butter in it actually. The name merely implies that the texture is smooth, cuz it's made from boiled, pureed apples. Try Cold Storage they might have some? But you can make them yourself and it uses very simple ingredients. Just google "apple butter" and you can easily find hundreds of website that tells you how to make them....

If you put the cream cheese in middle of the unbaked muffin batter (in the pan) prior to baking, the batter will rise around the cream cheese it looks kinda like a "pothole" lah when it cooks... very cute...
This is how it looks like, but this sample pic is carrot muffin, so the batter is heavier and doesn't rise as much as the ones I saw at Starbucks...

I've never made the creamcheese muffin myself, but I made the apple butter muffin.
The site says you gotta beat the cream cheese with egg yolk along with vanilla and sugar, but I usppose it's OK to skip the egg yolk, It'll just eb less stiff I guess. I mean, c'mon, how abd can cream cheese get? Anyway you make it, it'll still be good!
