my sister-in-law knows how to bake .. ahh .. see whether I can get the recipe from her.

I know she owes get the pineapple jam from the shop and she told me I must get the pineapple jam from JB but not local (Kuching).

yeah .. I love pineapple tart too, CNY is just another month! wow ..

The killer is in the jam and what goes in it. :P We tried buying the jam from the store but my mum still prefers our own homemade one. It's a lot of work though...

yes, I agreed with that, homemade is owes the best but have to jaga the fire if over cook will not taste nice.

at first my sis-in-law owes self-made the jam .. well well .. after she found the JB pineapple jam is good to use, she is no more longer doing the jam but just to get from the shop and it tasted good. :D

actually i have my mom can make nice jam... just that i need a nice pastry recipe...

ahh .. ok, let me ask frm my sis-in-law tomorrow, she still owing me the kek lapis recipe :P

The pineapple tarts we make are those open-faced ones. If you're talking about nestars, I think the pastry is slightly different. From experience, you can check out pastry recipes by Amy Beh. Her recipes are pretty good. :)

Pineapple Tarts (pastry)

Plain flour - 252 gm

Butter - 154 gm

Castor Sugar - 56 gm

Pinch of salt

Egg yolk - 1 tsp

Egg white - 1/2 tsp

Method:

1. Cream butter and sugar

2. Add in egg yolk and egg white. Mix well.

3. Fold in flour.

4. Wipe tray clean. Place baking paper.

5. Use tart cutter to make tarts.

6. Bake until light golden brown.

And this ..

Pineapple roll

500 gm butter

1 tsp vanilla (optional)

100 gm milk powder

100 gm icing sugar

2 egg + 1 yolk

700 gm flour

Method:

1. Beat all together until creamy

2. Fold in flour, milk powder.

3. Wrap pineapple jam.

4. Brush with egg yolk and bake.

Note: I got the recipe from my sis-in-law de, I hope it helps.

if u dont have milk powder perhaps u can

replace it with 750gm flour + 50gm cornflour

the cornflour is to makes it not so hard

This is what i make last weekend.

Next time i will buy ready made pineapple jam and mix with my own made jam (save time) :lol:

450g plain flour

50g milk powder

350g butter (cut into cube)

50g icing sugar

1/2 tsp salt

1/2 tsp vanilla

2 egg yolks

Mix flour, milk powder, butter , icing sugar with fingers until form into breadcrumbs

Add in egg yolks , vanilla and knead until just combined.

refrigerate for 15 minutes
