Simonne, I tried making that curd before. You need the enzymes in ginger to react with the milk so can't really cut down on that. Temperature is important. Very high temp will kill the enzymes and it won't work.

Next week - Monday and Tuesday I will not stay online, Gawai Holiday for Sarawak & Sabah and I will be away to longhouse to have my first Gawai Celebration in longhouse

I will try to source for buffalo milk from supermarket. Not sure they have this or not.
After letting it sit in the fridge a while, i think the texture improves

Since my FIL and his wife was here, we decided to break out the fondue set and chow down on some Swiss fondue. Sorry, no eating pictures...we were too busy enjoying ourselves!

Made Oreo Truffles today.. Not a success in making a nice looking ones, I have difficulties when I was in the dipping chocolate stage..

After dipping, the form 'lari' a bit, but still taste good..
Hopefully, I can get it right the next time..

The ginger egg custard looks yummy, I lurve ginger
I always have extra portion of those ginger served with steam chicken. hehe . I heard it's difficult to make, the custard, cause a lot of ppl say sometime it will not settle and will still be lembik. Any tips to share?

sharing herewith the photos of the cheesecake I made. Thanks to twinklestar for sharing the recipe. I just added some choc chips too the cheese. But i think I missed the butter for the base, wrong calculation on my end, ended up a bit to buttery and hence not so nice. And I made the oreo too fine... hehe, cause i used blender! should have just tumbuk and crush it instead of blending it way too fine. Am i right sifu?

But I am glad it turns out alright, I remember I tried making cheesecake many years back, 10 years ago? the chilled kind, it turns out.. teribble beyond imagination. hahaha.
