I am not a French food expert, but I managed to find the following for you: Crème fraîche made with buttermilk -- apparently the best one Ingredients: 1 tablespoon of buttermilk 1 cup of heavy cream Method: Stir the buttermilk and cream together in a glass bowl. Cover it and allow it to sit out on the counter overnight to thicken. Quick Method Ingredients: 1 cup chilled sour cream 1 cup chilled heavy cream Method: Whisk the sour cream and heavy cream together. You can use it immediately or allow it to sit out at room temperature for a few hours to thicken and sour a little more. Another Method for crème fraîche Ingredients: 2 tablespoons sour cream 2 cups heavy cream Method: Combine the sour cream and heavy cream and mix together. Cover with a kitchen or paper towel and allow to sit out at room temperature overnight. Source Another one... Time Required: 8-14 hours What You Need: buttermilk whipping cream glass jar Here's How: 1 cup whipping cream mixed with 2 tablespoons buttermilk. Combine well in glass jar and cover. Let stand at room temperature (about 70 degrees F.) for 8 to 24 hours, or until thickened. Stir well and refrigerate. Use within 10 days. Tips: Use as a thickener for soups or sauces.
